Corn / Bean Salad

2 cups frozen corn
1 can black beans
1 small chopped zucchini
1/4 cup red wine vinegar
2 T olive oil
1/2 cup finely sliced red onion
1 fresh tomato, chopped
1/4 cup chopped cilantro (optional)
Garlic powder and salt to taste

Mix all ingredients and chill at least one hour before serving.

To make the salad a main dish, add 1 cup chopped cooked chicken and/or 1/2 cup finely chopped cheese.
