1 egg
1/2 cup milk
1/4 cup canola oil
1 1/2 cups flour
1/2 cup sugar
2 t baking powder
1/4 t salt
1 cup fresh or frozen blueberries
Stir egg, milk, and oil together. Mix in flour, sugar, baking powder & salt just until moistened. Fold in blueberries.
Spoon into 12 greased or paper-lined muffin cups. Bake 20 minutes at 400 degrees.
